Hot Wassail

The perfect beverage during the winter to cure those sore throats!

HOT WASSAIL

4 c water
1 c sugar
2 sticks cinnamon...
3/4 t ground cloves
3 c pineapple juice
3 c orange juice
3 c lemonade

1. Combine water, sugar, cinnamon sticks, and cloves. Simmer, covered, for 30 min and let stand 1 hour. (Can be done up to 3 days ahead of time)
2. Add pineapple juice, orange juice, and lemonade. Heat and serve.

Strawberry Slush Punch

STRAWBERRY SLUSH PUNCH

3 c. water
2 c. sugar
1 3 oz. pkg. strawberry jello
2 c. boiling water
1 46 oz. can pineapple juice
1/2 c. lemon juice
1 T. almond extract
1 2 liter Sprite

Combine 3 c. water and sugar. Heat till dissolved. Dissolve jello in 2 c. boiling water. Combine jello and sugar mixture. Add pineapple juice, lemon juice and almond extract in plastic container. Mix. Freeze it overnight, or for 24 hours. One hour before serving, remove from freezer to make slush. Add Sprite just before serving.

WASSEL:

One gallon Apple Cider
One 6 oz can Orange Juice Concentrate
One 3 oz can Lemonade Concentrate
One cup brown sugar
1/4 tsp All Spice
1/4 tsp Clove
1/4 tsp Cinnamon

Put in a big pot and heat on stove top.
Crock Pot works too.
Float cinnamon sticks for a fun festive touch.

Caramel Apple Cider

(Recipe from Our Best Bites)


1 (64 oz) bottle of apple juice or cider (**much better with apple cider)
1/2 cup orange juice (freshly squeezed or high quality brand like Simply Orange)
2 cinnamon sticks
1/4 tsp ground allspice
1 orange
8 whole cloves
1/3 cup bottled caramel sauce (plus more to taste if desired)
Sweetened whipped cream
Ground cinnamon

1.Pour the apple cider into a large stock pot on the stove. Set heat to medium high. Add orange juice, cinnamon sticks, and allspice
2.Thoroughly wash your orange and then gently stab the whole cloves into it.
3.Gently drop your orange into the pot. Bring cider to a boil and then reduce to simmer. Simmer on low for 60 minutes or longer if you wish. If at any time the orange splits open, remove it from the pot.
4. After the cider has simmered for an hour, add caramel sauce and stir to combine and dissolve. Add more caramel to taste if needed.
5. When ready to serve, top with whipped cream, a drizzle of caramel and a sprinkle of cinnamon.

Green Smoothie

1-2 big handfuls of baby spinach
1 big leaf swiss chard
1-2 leaves kale
1/4 cup apple juice
swig of acai berry juice

pure' together in a blender until greens are a nice liquid

1 cup frozen strawberries
1 cup frozen blueberries
1-2 frozen bananas
(Add any frozen fruit desired)
spoonful of peanut butter (optional)
A little bit of water to get the blender movin'

Blend in blender until nice and smooth

Orange Julius

1 6oz. can frozen orange juice
1 cup milk
1/2 cup water
1/2 cup sugar
1 tsp. vanilla
1 tray of ice cubes

Put all ingredients except ice cubes in a blender. Blend Put ice cubes in 1 or 3 at a time until blended. If you are using the total blender or a vita mix. Add all ingredients and use the smoothie setting.

I added a banana and strawberries to the one I made at Terri's.

Mulled Apple Cider

(Makes 10 servings)

2 quarts bottled apple cider or juice (not unfiltered)
1/4 cup packed light brown sugar
1 square (8 inches) double thickness cheesecloth. (If you don’t have cheesecloth you can also use medical gauze or panty hose)
8 allspice berries or 8 whole Jamaican Allspice berries
4 cinnamon sticks
12 whole cloves
1 large orange

Combine apple cider and brown sugar in slow cooker.
Rinse cheesecloth; squeeze out water. Wrap allspice berries and cinnamon sticks in cheesecloth. Tie securely with string or strip of cheesecloth.
Stick cloves randomly into orange; cut orange into quarters. Place spice bag and orange quarters in cider mixture. Cover; cook on High 2.5- 3 hours.
Once cooked, turn slow cooker to low to keep cider warm up to 3 additional hours. Remove and discard spice bag and orange before serving. Ladle cider into mugs. Garnish with additional cinnamon sticks, if desired.
